Description
A spongy potato chocolate cake slice dusted in powdered sugar sits decadently on a clear kaleidoscopic plate topped with a scoop of whipped cream. This is the end result of mixing and baking the ingredients below for 30-35 minutes at 350 degrees in a lightly oiled 9-inch round cake pan whose base is lined with wax or parchment paper.
1 cup of sugar
1/2 cup of canola oil
2 large eggs
1/2 cup of cold, plain, mashed potatoes
1 cup of all-purpose flour
1/3 cup of unsweetened cocoa powder
1/2 teaspoon of baking powder
1/2 teaspoon of cinnamon
1/4 teaspoon of baking soda
Pinch of nutmeg
Pinch of salt
1/2 cup of buttermilk
Confectioner’s sugar for dusting cake (after baking is done)
