Stir in a heaped teaspoon of Turkish coffee to the pot. Into your “cezve”, put one coffee cup of water for each person, 1 heaped teaspoon of coffee and 1 rounded teaspoon or less of sugar. Stir well, put over very low heat and bring slowly to boil.<br />
<br />
As it gently start to boil, the froth forms on top and rise. Just before it overflows, remove and divide the froth into the cups. Then bring to boil again and divide the rest out to the cups.]]></dcterms:description>

Use clean and cold water inside the espresso machine and make your espresso according to the manufacture instructions.<br />

Pull the espresso by filling about 2 ounces (50 ml) of espresso into your cup, taking between 40 to 6- seconds for the extraction process. Stop the brewing process on the espresso machine and remove the cup after 60 seconds, so as to not pull more coffee into the cup. Cover and shake well for about 30 seconds. If using a blender or drink mixer, mix for about 15 seconds until you have a thick foam. <br />
<br />
Add ice cubes to a tall glass. Slowly pour the foamy coffee mixture into the glass. Fill the glass with water and add milk if desired.<br />

Grind 1 ½ Tbsp. espresso beans finer than you would for an espresso. If unable to grind the coffee beans fine enough, use a regular grind but tamp the coffee down harder than normal. The added pressure will slow the amount of water that can filter through. <br />

Pull (about ½ ounce in 25 seconds) the coffee from the espresso machine. If too much liquid comes out, tamp harder the next time. If too little comes out, tamp down a little less next time. <br />

Tamp down the coffee. <br />
Place the espresso maker over moderate heat.<br />
While the coffee is brewing, prepare the crema.<br />
<br />
Place ¼ cup sugar in a tall container with a spout (e.g. a liquid measuring cup).<br />
As soon as the coffee starts to fill the reservoir of the stovetop espresso maker, pour about ½ tablespoon of coffee over the sugar in the tall container, and return the espresso maker to the heat.<br />
Using a spoon, beat the sugar and ½ tablespoon of espresso well until the mixture turns a pale beige color, and most of the sugar begins to dissolve, approximately 1 minute. <br />
<br />
Once the coffee has been brewed, slowly pour the coffee over the creamed sugar, stirring until all the remaining sugar granules dissolve. <br />
A thin layer of sugar foam (crema) should float on top of the coffee.<br />
Pour the coffee into espresso cups and serve immediately. <br />
